Ingredients- 2 tablespoons of olive oil
1 pound of boneless skinless chicken breast
2 cups of broccoli
1 large zucchini cut into slices
1 medium bell pepper cut into slices
1 medium yellow pepper cut into slices
4 cloves of garlic minced or crushed
1 teaspoon of salt and pepper
Instructions- 1. Heat oil in large skillet medium to high heat. Add the chicken, veggies, garlic and spices. Cook for 8 to 10 minutes, stirring occasionally until veggies are soft and tender and chicken is golden and cooked all the way through. Can be put over rice, pasta, toasted bread or enjoyed as is for a low carb meal!
